Dehydrated Wheat Sourdough Starter Kit

Dehydrated wheat starter with wild yeast and natural lactic acid bacteria. Includes instructions and bread recipe.

This is a genuine wheat starter in powdered form, not a live culture. Born in Australia in 2017 and maintained with organic unbleached wheat (baker’s) flour from Wholegrain Milling, it has a creamy, custard-like texture and a light cream colour. Once rehydrated, it develops the characteristic tangy wheat aromas, with natural sour notes reminiscent of vinegar and sour cream (the subtle paint or nail polish aromas are perfectly normal in wheat starters).

Each batch is fermented for 48 hours, then gently dried in a low-temperature dehydrator, crushed, and ground into a fine powder. This gives the starter a long shelf life while retaining all the natural yeasts and lactic acid bacteria. After rehydration, the starter is ready to use within 48 to 72 hours, though a few feedings may be needed to reach full activity.

It works best in lighter-style sourdough, pizza, focaccia, and soft pastry doughs such as cinnamon rolls or croissants. Use 15 to 20 percent directly in your dough, or build a leaven for extra lift. After activation, it often doubles or triples within hours.

How to Activate:

Rehydrate the starter by mixing the full sachet with the amount of water and flour indicated in the instructions. Leave at room temperature and feed once daily. It usually takes 48–72 hours and a few feedings until the starter becomes fully active. You’ll know it’s ready when it doubles in volume, shows visible bubbles, and has a pleasant tangy aroma. For best results, keep it at room temperature, stir well at each feed, and use fresh flour and water. Once fully active, it behaves just like a live starter.
