Choose Your Starter
Wheat Starter
Maintained with organic unbleached wheat (baker's) flour from Wholegrain Milling. Born in Australia in 2017. Creamy, custard-like texture, light cream colour, and a characteristic tangy aroma. Best for lighter sourdoughs, focaccia, pizza, and soft pastries.
Rye Starter
Originating from Poland and established in Australia in 2014, maintained with organic whole rye flour from Wholegrain Milling. Thick, peanut-butter-like texture, light brown colour, fruity and complex aroma. Best for classic sourdough loaves, baguettes, and whole-grain breads.
Live vs Dehydrated
- Live starter: active and ready to feed on arrival. Ready to bake with in 24–48 hours.
- Dehydrated starter: dried for a longer shelf life. Needs 2–4 days of feedings to reactivate. Great if you are not baking immediately or want to give as a gift.
Choose Your Banneton Shape
- Oval banneton (most popular): produces an oblong bâtard using around 500–550g of flour. Slices evenly for sandwiches and fits standard bread bags easily.
- Round banneton: produces a classic round boule using around 700–750g of flour. Larger loaf, great for families and sharing.

Usage
Use 15–20% of your total flour weight as starter, or build a leaven first for extra lift. Our starters often double or triple within hours after feeding. Ready to bake with 24–48 hours after first feeding. Dehydrated starters may take a few extra days to reach full activity.
One More Thing You'll Need
Everything to get started is included in this set — the one thing to have ready at home is flour. For feeding your starter, use the same flour type as your culture — organic unbleached wheat flour for the wheat starter, organic whole rye flour for the rye starter. Bundles that include a banneton give you a choice of shape:
Oval banneton: Our most popular shape. Produces an oblong bâtard using around 500–550 g of flour — a smaller, more manageable everyday loaf that slices evenly for sandwiches and toast. Fits standard bread bags and bread boxes easily.
Round banneton: Produces a classic round boule using around 700–750 g of flour — a larger loaf that's great for families, sharing, or a dramatic table centrepiece. Easy to slice in any direction.
Many bakers end up owning both — the oval for everyday loaves, the round for larger weekend bakes and gifts. If you're buying your first banneton and unsure, go with the oval — it's the one most of our customers reach for first.

Getting Started
Once your bundle arrives:
1. Feed your starter within 24 hours of arrival (live), or store your dehydrated starter in a cool dry place and begin rehydration when you are ready — it keeps for up to 12 months.
2. While your starter activates over the next 24–72 hours, familiarise yourself with the tools included.
3. If using your banneton without the cloth liner, give it a light dusting of rice flour before first use. If using the liner, no preparation is needed.
4. When your starter is active and doubling reliably, you are ready to bake your first loaf.
Printed starter maintenance instructions and a sourdough bread recipe are included in the box. Our step-by-step starter feeding guide is also available on our website, and we offer ongoing support — just text us.
